I love three-ingredient banana pancakes, but cooking a batch always feels excessively time-consuming, especially when there is a small assistant strewing kitchen implements everywhere underfoot. It finally occurred to me that I could make a giant German-style pancake instead, and it worked!

(This recipe is everywhere, so I don't have a specific website to credit.)

Mix the following in a food processor or blender:
- 2 bananas
- 3 eggs
- 1/4 cup coconut flour

Melt butter in a small skillet over medium heat and then pour in the batter. Cover with a lid for ~5 minutes, then carefully flip and let cook for another ~3 minutes before sliding onto a plate. 

Serves around 2.
